2021, Pistache L'aufrere Soil predominantly sandy on sandstonePistache is Sebastien Fzas' signature red wine, made from 100% Tannat from biodynamic vines in Gers. The grapes are fermented spontaneously after destemming and pressed after a full 3 weeks of maceration. The wine is first aged for 1 year in oak barrels and then 10 months in concrete for balance a dark, structured and juicy wine, with a classic southern French temperament.
